Wheaten food is also an essential delicacy in the daily life of Xinjiang locals! Thin-skinned baked buns are a local specialty that's highly recommended by my chef teacher. The frozen hard dough requires skill to roll out thinly. It's then filled with lamb and onion stuffing, or a mix of lamb, pumpkin and chili, then placed in a special clay oven.

Apart from meat and buns, in the Kashi region, the tangy and spicy mung bean jelly is a must-try delicacy.
