Among wine lovers, he is sometimes called sifu, which means 'master' in Cantonese, a nod to his knowledge and the size of his collection. Wine insiders say he's known for sharing prized bottles. Charles Curtis, a New York wine consultant and former head of wine for Asia at Christie's, said that a lunch he had in September with Mr. Tang and six others was accompanied by five bottles from Mr. Tang's collection, including a 1990 Château Margaux (a top Bordeaux) and a rare 1997 Henri Jayer from Burgundy. Wine is part of Mr. Tang's political legacy, too. As Hong Kong's chief secretary, he lifted the import duty in 2008, turning the city into a major wine hub.
